Pumpkin Pie Energy Bites

Ingredients
  

  • 1 cup rolled oats, gluten-free
  • 1/2 cup unsweetened coconut, shredded
  • 1/2 cup pumpkin puree
  • 1/2 cup mini chocolate chips
  • 1/4 cup maple syrup (honey works as well)
  • 2 tsp pumpkin pie spice mix
  • 1 tsp vanilla

Instructions
 

  • Combine all ingredients in a bowl and mix thoroughly.
  • Refrigerate the mixture until firm enough to roll into balls - about 25 minutes.
  • Once chilled, roll the dough into golf size balls. Refrigerate or freeze again until ready to eat!
