Healthy Cheeseburger Bake

Ingredients
  

  • 4 cups brown rice pasta (I used macaroni)
  • 1 lb organic lean ground beef
  • 1/2 onion, chopped (or more to taste)
  • 1 tbsp garlic, minced
  • 1 cup broth
  • 1 cup cheddar cheese (or vegan cheese)
  • 1/2 cup pepper jack cheese (or vegan cheese)
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 1 tbsp worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 dill pickles chopped

Healthier Big Mac Sauce

  • 1/2 cup primal kitchen mayo
  • 2 tbsp dill pickle relish
  • 2 tbsp sugar free ketchup (I like Good Food for Good)
  • 2 tsp mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp organic cane sugar
  • 1 tsp white vinegar
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 400 degrees.
  • Spray cassorole dish (9x13) with extra virgin olive oil or avocado oil and set aside.
  • Heat a large cast iron pan or skillet on medium heat. Add ground beef, onion, garlic and cookstirring frequently.
  • Fill a large pot with water and add 1 tsp salt. When water is boiling, add pasta and cook pasta for 6 minutes (you want it to be 2/3 cooked).
  • Combine the meat mixture, noodles and remaining ingredients (only half of cheese) in casserole dish and stir to combine. Top with remaining cheese.
  • Bake for 15 minutes or until cheese is melted.

Healthier Big Mac Sauce

  • Combine all ingredients in a bowl and stir. Is also delicious with homemade fries!
  • Top with chopped dill pickles and healthier big mac sauce! Or add more of your favourite toppings such as: diced tomatoes, jalapeƱos, fresh onion
