1/2onion, chopped finely or blitzed in mini food processor
2cloves garlic
1tbspfresh basil (or dried)
1/4cup chopped parsley
1large egg
1 1/4cuppanko (gluten-free)
1/2tspsalt
1/2tspblack pepper
1cupshredded zucchini
Instructions
Preheat oven to 400 degrees.
In a mini food processor (or you can chop finely) combine onion, garlic and fresh herbs and pulse until combined and uniform, about 10 pulses.
Shred zucchini on fine side of grater or in food processor. Using paper towel or cotton towel squeeze out extra moisture.
In a large bowl add turkey, egg, panko, salt and pepper. Add herb and onion mixture and zucchini and mix thoroughly with your hands until combined. Form golf ball sized meatballs and line on large baking try lined with parchment paper.
Bake for 12 minutes and then adjust oven to broil. Turn to 500 and broil for an additional 3-5 mintues or until the tops are browned and the meatballs are cooked through.
Serve with healthy greek yogurt tzaziki sause and a tiny bit of feta if desired.
