Ingredients

rolled oats, gluten-free

unsweetened coconut, shredded

pumpkin puree

mini chocolate chips

maple syrup (honey works as well)

pumpkin pie spice mix

vanilla
Instructions
Combine all ingredients in a bowl and mix thoroughly.
Refrigerate the mixture until firm enough to roll into balls - about 25 minutes.
Once chilled, roll the dough into golf size balls. Refrigerate or freeze again until ready to eat!
