No-Bake Healthy Oatmeal Bars

These No-Bake Healthy Oatmeal Bars take only 5 minutes to make and are packed with delicious ingredients like Natural Peanut Butter and Coconut! They are also gluten, dairy and refined sugar free and are vegan friendly!

Ingredients
  

  • 1 cup Gluten free oats (quick oats work)
  • 1 cup unsweetened coconut (shredded)
  • 1/4 cup almond flour (or meal)
  • 3/4 cup natural peanut butter
  • 1/2 cup organic honey
  • 1 tsp vanilla
  • 1/4 tsp salt

For the chocolate topping

  • 1/4 cup dark chocolate chips
  • 1 tbsp natural peanut butter
  • 1/2 tsp coconut oil

Refined-sugar free topping option

  • 1/4 cup unsweetened chocolate chopped
  • 1 tbsp natural peanut butter
  • 1 tbsp honey or maple syrup

Instructions
 

For the bars

  • In a small bowl mix together the oats, coconut and almond meal. Set aside.
  • In a saucepan (or microwave) gently melt the natural peanut butter and honey until smooth.
  • Add vanilla and salt to the natural peanut butter and honey mixture and stir until combined.
  • Add peanut butter mixture to the dry ingredients and mix until combined.
  • Press into an 8x8" pan and set aside.

For the topping

  • Melt the chocolate chips, peanut butter and coconut oil in a double boiler (or microwave). Start with low heat and continue stirring until completely melted.

Refined-sugar free topping

  • Combine the unsweetened chocolate, peanut butter and honey (or maple syrup) in a double boiler (or microwave).

Putting it together

  • Spread the chocolate topping over bars.
  • Let the bars set up in fridge or counter until the chocolate is set.
  • Cut into bars. Can be served at room temperature or cold.
  • Store in airtight container in the refrigerator.
