No-Bake Healthy Oatmeal Bars

- 1 cup Gluten free oats (quick oats work)
- 1 cup unsweetened coconut (shredded)
- 1/4 cup almond flour (or meal)
- 3/4 cup natural peanut butter
- 1/2 cup organic honey
- 1 tsp vanilla
- 1/4 tsp salt
For the chocolate topping
- 1/4 cup dark chocolate chips
- 1 tbsp natural peanut butter
- 1/2 tsp coconut oil
Refined-sugar free topping option
- 1/4 cup unsweetened chocolate chopped
- 1 tbsp natural peanut butter
- 1 tbsp honey or maple syrup
For the bars
In a small bowl mix together the oats, coconut and almond meal. Set aside.
In a saucepan (or microwave) gently melt the natural peanut butter and honey until smooth.
Add vanilla and salt to the natural peanut butter and honey mixture and stir until combined.
Add peanut butter mixture to the dry ingredients and mix until combined.
Press into an 8x8" pan and set aside.

Putting it together
Spread the chocolate topping over bars.
Let the bars set up in fridge or counter until the chocolate is set.
Cut into bars. Can be served at room temperature or cold.
Store in airtight container in the refrigerator.
