I have a major sweet tooth and therefore always try and have a healthy snack option available for when I’m craving something sweet. These No-Bake Healthy Oatmeal Bars with Natural Peanut Butter & Coconut are one of my ultimate sweet treat favourites!

These NO-Bake Healthy Oatmeal Bars are packed with good for you ingredients and protein. They are refined sugar free, gluten-free, dairy-free and are vegan-friendly making them the perfect snack!

I made these last week and every time I looked over at the pan it was dwindling down at a fast rate! I can confidently say they are husband, teenager and toddler approved? Seriously, they are a healthy treat you can feel good about giving to your family.

No-Bake Healthy Oatmeal Bars
Ingredients
- 1 cup Gluten free oats (quick oats work)
- 1 cup unsweetened coconut (shredded)
- 1/4 cup almond flour (or meal)
- 3/4 cup natural peanut butter
- 1/2 cup organic honey
- 1 tsp vanilla
- 1/4 tsp salt
For the chocolate topping
- 1/4 cup dark chocolate chips
- 1 tbsp natural peanut butter
- 1/2 tsp coconut oil
Refined-sugar free topping option
- 1/4 cup unsweetened chocolate chopped
- 1 tbsp natural peanut butter
- 1 tbsp honey or maple syrup
Instructions
For the bars
- In a small bowl mix together the oats, coconut and almond meal. Set aside.
- In a saucepan (or microwave) gently melt the natural peanut butter and honey until smooth.
- Add vanilla and salt to the natural peanut butter and honey mixture and stir until combined.
- Add peanut butter mixture to the dry ingredients and mix until combined.
- Press into an 8×8" pan and set aside.
For the topping
- Melt the chocolate chips, peanut butter and coconut oil in a double boiler (or microwave). Start with low heat and continue stirring until completely melted.
Refined-sugar free topping
- Combine the unsweetened chocolate, peanut butter and honey (or maple syrup) in a double boiler (or microwave).
Putting it together
- Spread the chocolate topping over bars.
- Let the bars set up in fridge or counter until the chocolate is set.
- Cut into bars. Can be served at room temperature or cold.
- Store in airtight container in the refrigerator.
