There might be nothing I like more than a quick hack that saves me time in the kitchen and tastes delicious. These healthy blueberry muffin smoothies taste exactly like the real baked goods but can be made in seconds with ingredients you have on hand.
Since the weather has been cold lately and we are stuck inside more I find my kids are snacking even more than the usual. I was thinking of making muffins one day but ran out of time and then the kids asked for a smoothie. I took a quick peak in the freezer and a big bag of blueberries stared back at me. And thus, the blueberry muffin smoothie was born, and the kids loved it!

I mentioned a few times that my favorite thing to buy in our climate during winter is frozen organic fruit. Not only does it taste better than the fresh stuff out of season, but it a budget-friendly hack to eating quality food for a great price. I prefer to buy frozen organic blueberries to get us through the winter months.
Ingredients you will need:
- Organic unsweetened almond milk
- Good quality plant-based protein powder
- Organic frozen blueberries
- Organic baby spinach
- Nut butter (almond, peanut, or seed butter all work)
- Cinnamon
- Vanilla Extract
Optional ingredients and toppings:
- 1/4 cup Gluten-free rolled oats for an extra nutrition boost
- Coconut chips

Healthy Blueberry Muffin Smoothie
Ingredients
- 1 cup organic unsweetened almond milk
- 1/2 tsp vanilla extract
- 1 cup organic frozen blueberries
- 1 scoop vegan vanilla protein powder
- 1 1/2 cups organic baby spinach
- 2 tbsp organic almond butter (or peanut butter or your favourite no-nut butter)
- 1/2 tsp cinnamon
Instructions
- Combine all ingredients in a blender and blend until smooth. Top with coconut chips, cacao nibs, fresh fruit and enjoy!
