Pumpkin Pie is always a fan favorite in the fall and when the cool weather arrives, I want all the comfort of pumpkin spice flavor. I definitely prefer a slice of pumpkin loaf or pumpkin pie to Halloween candy any day, but that’s just me!
Pumpkin Energy Bites: The perfect snack
When experimenting with these energy bites I made sure the pumpkin wasn’t too strong. Pumpkin pie flavor is wrapped up into every delicious bite but it’s not overpowering! (You can find my favorite pumpkin pie spice here)

With all the back to school, hockey, dance, and swimming it’s always handy to have some grab and go options ready! For a snack that takes less than 10 minutes, pumpkin pie energy bites are a quick portable snack.

Enter the Taste Testers
Since my kids eat a million snacks in a day, they were the perfect taste testers for these energy bites. To be honest, I wasn’t sure what their reaction was going to be given the fact that pumpkin pie flavors can be a bit of a mature taste.
Well, I can tell you that they gobbled the first one down in no time and promptly asked for a second, then a third! Safe to say these pumpkin pie energy bites passed the kids test, husband test, and teenager test!

Pumpkin Pie Energy Bites
Ingredients
- 1 cup rolled oats, gluten-free
- 1/2 cup unsweetened coconut, shredded
- 1/2 cup pumpkin puree
- 1/2 cup mini chocolate chips
- 1/4 cup maple syrup (honey works as well)
- 2 tsp pumpkin pie spice mix
- 1 tsp vanilla
Instructions
- Combine all ingredients in a bowl and mix thoroughly.
- Refrigerate the mixture until firm enough to roll into balls – about 25 minutes.
- Once chilled, roll the dough into golf size balls. Refrigerate or freeze again until ready to eat!
